金酒（Gin），也叫杜松子酒，是1660年由荷兰的莱顿大学（UnversityofLeyden）西尔维斯（Doctor Sylvius）博士制造成功的。

金酒的香气主要来自杜松子。杜松子的加工法有许多种，一般是将其包于纱布中，挂在蒸馏器出口部位。蒸酒时，其味便串于酒中，或者将杜松子浸于绝对中性的酒精中，一周后再回流复蒸，将其味蒸于酒中。还可以将杜松子压碎成小片状，加入酿酒原料中，进行糖化、发酵、蒸馏，以得其味。有的国家和酒厂还会配合其它香料来酿制金酒，比如荽子、豆蔻、甘草、橙皮等。当然这些都是厂家非常保密的配方。
